FERMENTATION
Each cherry is handpicked at the peak of ripeness, ensuring only the finest beans move forward. After a delicate flotation process to remove lighter cherries, we monitor the natural sugars before beginning a layered fermentation journey. For 14 hours, the cherries open up their flavors in open tanks. Next, they’re taken to a sealed environment for an 18-hour, oxygen-free fermentation, deepening their profile. Finally, they’re pulped and given a refreshing aerobic fermentation for 24 more hours, ensuring that each bean carries an unmatched depth and complexity.
DRYING
The coffee is dried in a mechanical dryer at a temperature of 37°C. It is then stored in a temperature controlled warehouse at a temperature between 18°C and 19°C
