CUP PROFILE
Enjoy a coffee with notes of nuts and almonds, complemented by a sweet guava aroma. Each sip reveals malic acidity with hints of green grapes, brown sugar, and tamarind, finishing clean with a green tea essence.
FERMENTATION
Coffee cherries are handpicked at their peak ripeness and immersed in water to remove lighter beans, ensuring top quality from the very start. After checking their sugar level with Brix degrees, we begin the magic of fermentation. In open tanks for 48 hours, the beans develop unique, delicious flavor notes that make each sip exceptional.
DRYING
After fermentation, coffee cherries are carefully dried in mechanical silos for 8 to 12 days at a steady 38°C. They’re then stored in climate controlled warehouses at 18°C- 19°C, preserving their freshness and ensuring a clean, vibrant flavor profile.
