CUP PROFILE
A lightly floral aroma leads to caramelized pineapple and ripe grapes, finishing with a refreshingly tart acidity, creamy body, and a touch of liqueur-like warmth.
FERMENTATION
Only the ripest coffee cherries are hand selected and submerged to filter out lighter, less flavorful beans. After measuring the cherries’ natural sugars, they are carefully fermented in grainpro bags for 70 hours. With a gentle rotation every 5 hours, each cherry absorbs its own flavorful essence, enhancing the natural acidity and fruity notes.
DRYING
To lock in quality and flavor, the cherries first go through a 3-day mechanical drying process at a controlled temperature of 38-40°C. Then, they complete their drying journey naturally on raised beds for 12-15 days, developing richness and complexity. Stored in climate controlled conditions at 18-19°C, the beans rest until they’re ready for roasting perfection.
