CUP PROFILE
Experience caramel warmth, soft spice, and floral layers. Taste notes of toasted almonds, panela, a hint of grapefruit, creamy white chocolate, and a dash of cinnamon, all rounded off with a clean finish and a smooth, silky body.
FERMENTATION
Each cherry is handpicked at its peak and undergoes a delicate water bath to naturally sort the beans by density. Once perfected, we check sugar levels to prepare for fermentation. The beans are then pulped and given 72 hours of open-air fermentation, enhancing flavor depth. Afterward, a gentle rinse removes the fruit’s sweetness, setting the stage for drying.
DRYING
The beans are dried for three to five days in specialized drying silos, keeping temperatures steady at 38°C to lock in the fresh flavors. Then, we store the coffee in temperatureregulated cellars set to a precise 18- 19°C to preserve the unique notes for roasting.
