FERMENTATION

Next, we measure their natural sweetness with precision, setting the stage for fermentation magic. For 72 hours, these cherries are lovingly fermented in open tanks, unlocking the vibrant, complex notes that will define your coffee experience.

DRYING

Sun-Kissed Perfection Our cherries are dried to perfection using advanced mechanical dryers, ensuring consistent flavor development over 8 to 12 days at a controlled 38°C. Once dried, the beans rest in climate-controlled storage, cocooned at an ideal 18– 19°C to preserve their unique character until it’s time to shine.
