FERMENTATION
Where Flavor is Born Every cherry is hand-picked at its peak ripeness, ensuring only the best make it to your cup. Through a meticulous floating process, we gently separate the grain less denses from the rest, guaranteeing superior quality. Next, we measure their natural sweetness with precision, setting the stage for fermentation magic. For 72 hours, these cherries are lovingly fermented in open tanks, unlocking the vibrant, complex notes that will define your coffee experience.
DRYING
Sun-Kissed Perfection Our cherries are dried to perfection using advanced mechanical dryers, ensuring consistent flavor development over 8 to 12 days at a controlled 38°C. Once dried, the beans rest in climate-controlled storage, cocooned at an ideal 18– 19°C to preserve their unique character until it’s time to shine.
